Burdock root (Gobo in Japanese) is an important ingredient in Japanese cuisine.
Raw gobo is hard and looks like a tree root, but when cooked it gets soft and it has a mild yet distinct taste. Pickled gobo is eaten widely in Japan as a good condiment to main dishes. It is also used as an ingredient for sushi rolls.
Gobo is not vitamin-rich but has a lot of fiber and minerals. It is said that gobo has numerous health benefits such as detoxifying, regulating blood pressure, helping relieving constipation, controlling diabetes and skin care.
